Arugula and Honeyed Pear Salad
Recipe
Ingredients (serves 2):
- ½ cup coarsely chopped walnuts
- 2-3 pears (firm & ripened) peeled, cored and cut into large pieces
- 2 tbsp lemon juice
- 2-3 tbsp honey
- 2 tbsp butter
- 2 servings baby arugula
- ½ cup of Cambozola(a mild blue cheese with a creamy texture)
- 4 tbsp olive oil
- 1 tbsp white balsamic vinegar
- ½ tsp dijon mustard
- kosher salt & pepper to taste
Method:
- Once the pears are prepared, pour the lemon and honey over them and mix well
- Place a dry nonstick sauté pan over medium heat. Toss the chopped walnuts in the pan, stirring frequently. Remove and set aside.
- In the same pan melt the butter. Add the pear lemon and honey mixture.
- Turn the pears while cooking until the honeyed pears are caramelized
- Whisk olive oil, white balsamic vinegar, dijon mustard, salt and pepper until emulsified
- Lightly toss arugula with dressing, arrange the Cambozola / blue cheese and honeyed pears. Scatter the toasted walnuts on top and serve immediately.
