Arugula and Honeyed Pear Salad

Recipe

Ingredients (serves 2):


  • ½ cup coarsely chopped walnuts
  • 2-3 pears (firm & ripened) peeled, cored and cut into large pieces 
  • 2 tbsp lemon juice
  • 2-3 tbsp honey
  • 2 tbsp butter
  • 2 servings baby arugula
  • ½ cup of Cambozola(a mild blue cheese with a creamy texture)
  • 4 tbsp olive oil 
  • 1 tbsp white balsamic vinegar 
  • ½ tsp dijon mustard
  • kosher salt & pepper to taste 


Method:

  1. Once the pears are prepared, pour the lemon and honey over them and mix well
  2. Place a dry nonstick sauté pan over medium heat. Toss the chopped walnuts in the pan, stirring frequently. Remove and set aside.
  3. In the same pan melt the butter. Add the pear lemon and honey mixture.
  4. Turn the pears while cooking until the honeyed pears are caramelized
  5. Whisk olive oil, white balsamic vinegar, dijon mustard, salt and pepper until emulsified 
  6. Lightly toss arugula with dressing, arrange the Cambozola / blue cheese and honeyed pears. Scatter the toasted walnuts on top and serve immediately.
